With recent renovations at the nearby Hyatt and closure of the legendary Lone Eagle Grill, Incline Village is undergoing an exciting transformation. Russell Jones, owner and operator of Crosby’s Kitchen and Cocktails, sees this as an opportunity to capitalize on new innovations and growth to cater to the evolving atmosphere, lifestyle and tastes while staying true to his loyal community base.
“I really try to create a diverse menu to cater to everyone’s palate,” Jones says. “I want to use this golden opportunity to evolve and expand the menu, to build upon what we have and experiment with healthier and more flavorful options, such as seafood, chicken and salads.”
With sustainability and longevity at the forefront of the culinary and lifestyle industries, it’s no surprise that Jones envisions bringing new meals that reflect those trends to Lake Tahoe, a haven for healthy living. However, he still is passionate about staying true to his menu and customer favorites like chicken and waffles, wings, burgers and tacos.
The fusion of timeless traditions and modern trends has been at the forefront of the Tahoe region for the past few decades, and Jones’ plans to capitalize on these could help move Incline Village further into the spotlight as a top summer destination during this exciting transitional time.
